me too. I use debfoster, a apt-get frontend, to manager my packages.
actually I have about 664 packages, but I only have to tell debfoster
to keep 249 of these 664 packages. These 249 are the "top level"
packages that may depend on many other packages. Best part is I
only had to do this selection once. Next time, I simply add new
"top level" package, without worrying about its depending packages.
Also, when I remove the "top level" package, its depending packages
will also be removed automatically. I found this way, I can keep
the disk space minimal, where no unnecessary libraries, etc. are
installed on my system.
Also, Debian has pretty good chinese support. Even my parents
share the computer with me. :-)
BTW, you may want to choose install debian/testing or debian/unstable.
Someone once joked online, said, even debian's "unstable" distribution
is more stable than rh's .0 version. ;)
